Giant Purple Eating Taro (Colocasia esculenta) is grown for its very large edible roots with white flesh and purple marks. When cooked, the root is soft, creamy, and slightly sweet, with a pleasant smell and rich flavour, and is well known as one of the best taro types for Asian cooking. The root can be boiled, fried, or baked and is used in soups, curries, cakes, and desserts, while the leaves can also be eaten when cooked like spinach or used to wrap food for steaming. The plant has large, heart-shaped leaves, grows to about 1 metre tall, and is easy to grow in warm conditions in full sun or part shade, including in water or ponds.
